PURPOSE: A producing method of rice noodles containing a laminaria japonica extract is provided to prevent the noodles from sticking, and to improve the quality of the rice noodles. CONSTITUTION: A producing method of rice noodles containing a laminaria japonica extract comprises the following steps: preparing mixing water containing noodle ingredients, salt, the laminaria japonica extract, rice bran flavoring liquid, and purified water; inserting the mixing water into a kneader, and kneading and gelatinizing; extruding the obtained dough for molding the rice noodles; pre-drying the rice noodles at 65~75deg C for 3~5minutes; and drying the pre-dried noodles at 45~60deg C for 60minutes. |
