PURPOSE: Lentinus edodes slices without using an antiseptic, and a producing method thereof are provided to secure the unique taste of lentinus edodes, and to offer the taste of beef jerky. CONSTITUTION: A producing method of lentinus edodes slices comprises the following steps: soaking dried lentinus edodes in water for 1~3hours; double-boiling the lentinus edodes for 5~20minutes; washing, selecting, and grinding the lentinus edodes; adding seasoning liquid containing 40~50parts of soy sauce by weight, 10~20parts of starch syrup by weight, 30~40parts of black sugar by weight, 1~10parts of garlic by weight, 0.1~5parts of ginger by weight, and 0.01~5parts of black pepper powder by weight to the lentinus edodes; double boiling the mixture; and molding the lentinus edodes, and drying for 4~6hours at 60~70deg C.
