摘要 PURPOSE: Low sugar grain syrup, and a producing method thereof are provided to reduce the content of sugar in the grain syrup using a stevia extract and a siberian chrysanthemum extract, and to store the grain syrup for a long time. CONSTITUTION: A producing method of low sugar grain syrup comprises the following steps: washing 9~11kg of non-glutinous rice, and soaking the rice in water for 3~5hours before steaming to obtain hard boiled rice; adding 24~26L of water to the hard boiled rice, inserting a liquefying enzyme for liquefying the rice at 90~110deg C for 1.5~2.5hours, and cooling at 55~65deg C; stirring the cooled mixture, and adding saccharifying enzymes for saccharifying the mixture for 8~12hours; extracting and filtering the mixture using an extractor; adding a lentinus edodes extract, a stevia extract, a siberian chrysanthemum extract, and a thickener to the filtered mixture; and concentrating the mixture at 55~65deg C.
