PURPOSE: A method for manufacturing rice-fermented vinegar using Oenanthe javanica is provided to produce vinegar with deep taste and to the flavor, taste, and color of Oenanthe javanica. CONSTITUTION: A vinegar using Oenanthe javanica extract is obtained by adding Oenanthe javanica extract to hard-boiled rice, fermenting, and maturing. The mixture ratio is 85-95 weight% of hard-boiled rice and 5-15 weight% of Oenanthe javanica and Oenanthe javanica extract. The Oenanthe javanica extract is obtained by washing and cutting Oenanthe javanica, sterilizing at 70-80°C for 5-10 minutes, and extruding to obtain the extract. |
