PURPOSE: A continuous producing method of fish paste noodles using soft fish flesh is provided to simplify producing processes using a drum cooker and to improve the surface uniformity of the fish paste noodles after frying. CONSTITUTION: A continuous producing method of fish paste noodles comprises the following steps: mixing 100parts of soft fish flesh by weight, 1~3parts of salt by weight, 10~40parts of starch by weight, 1~2parts of cooking oil by weight, 1~2parts of sugar by weight, and 0.5~2parts of additive by weight; adding 10~30parts of water by weight inside a vacuum mixture to obtain fish paste; molding the fish paste into a sheet shape; cooling the molded fish paste; extruding the molded fish paste into noodles and cutting; frying the fish paste noodles; removing the oil from the fried fish paste noodles; and packing the noodles. |
