PURPOSE: A non-fermented stuffed pancake mix composition, and stuffed pancake using thereof are provided to secure the dough property and the molding ability of the stuffed pancake without a fermenting process. CONSTITUTION: A non-fermented stuffed pancake mix composition contains 35~45wt% of strong flour, 15~20wt% of medium-strength flour, 25~30wt% of tapioca modified starch, 4~6wt% of glutinous rice flour, 2.5~3.5wt% of soybean oil, 2~3wt% of glutinous corn modified starch, 1~3wt% of white sugar, 1~3wt% of skimmed milk powder, 1~2wt% of refined salt, 0.2~0.4wt% of glucose, 0.5~1.5wt% of quick-acting baking powder, 0.1~0.3wt% of roasted bean flavor oil, 0.1~0.3wt% of inactive dry yeast, and 0.01~0.05wt% of gardenia yellow. |
