A sprayable liquid edible composition comprises 0.1 to 70% oil, 25 to 98% of an aqueous component, 0.1 to 15% of a non-stick component and 0.01 to 0.1% gum. The non-stick agent is preferably lecithin or a modification or derivative thereof. The gum component provides for improved stability of the compositions, whilst providing the compositions with good sprayability due to pseudoplastic properties of the gum component. Xanthan gum is a particularly preferred gum. Alcohol may be added to composition as a means of preservation. |
