PURPOSE: A cooking method of lamb meat using seasoning sauce, and a producing method of packed lamb meat are provided to cook the lamb meat using the sauce containing a tissue-cultured wild ginseng extract. CONSTITUTION: A cooking method of lamb meat using seasoning sauce comprises the following steps: mixing 4.9wt% of chitoic oligosaccharide with water, and boiling for 10~15minutes before cooling to obtain sugar sauce(S10); boiling tissue-cultured wild ginseng, green tea leaves, fresh pine leaves, ginger, and other ingredients with water to obtain a tissue-cultured wild ginseng extract(S20); inserting the lamb meat into a jar containing the sugar sauce, and aging for 5~6days(S30); and inserting the aged lamb meat into a jar containing the tissue-cultured wild ginseng extract, and aging for 1~2days(S40).
