PURPOSE: Salted vegetables, and a two-step salty water salting method for salting the vegetables are provided to reduce the salinity deviation between tissues of the vegetables. CONSTITUTION: A two-step salty water salting method for salting vegetables comprises the following steps: spraying 20~25wt% of salty water with the high salinity to the vegetables for pre-processing; setting the vegetables inside a salting tank for 1~3hours; supplying 14~19wt% of salty water to the vegetables, collecting the salty water from the tank; and repeating the salting and salty water collecting processes for 2~4times for 12~20hours. |
