<P>PROBLEM TO BE SOLVED: To provide starch which includes resistant starch at a high ratio and exhibits excellent tolerance to the heat treatment of resistant starch. <P>SOLUTION: The starch highly containing resistant starch satisfies a condition (a): the resistant starch content is ≥60% when measured according to a resistant starch measurement method of the AOAC official method 2002.02, the condition (b): the peak of molecular weight is 6×10<SP>3</SP>to 4×10<SP>4</SP>, the condition (c): the degree of molecular weight dispersion is 1.5-6.0, and the condition (d): the gelatinization enthalpy is ≤10 J/g at 50-130°C when measured by differential scanning calorimetry. <P>COPYRIGHT: (C)2011,JPO&INPIT |
