The invention relates to a method for peeling bean-like fruits and/or seeds and a device for performing said method. A preferred area of application of the invention is the peeling of soybeans. The peeling method is characterized in that the bean-like fruits and/or seeds are broken into 2 to 8 fragments, and then the broken bean-like fruits and/or seeds are treated in a fluidized-bed apparatus (1) over a time period of 4 to 12 minutes, wherein the fragments are fluidized by means of a fluidization gas flow having a speed in the fluidized bed in the range from 1.0 to 2.2 m/s and at least one gas flow having a speed greater than 12 m/s, preferably in the range from 12 to 35 m/s, is blown into the fluidized bed transversely to the flow direction of the fluidization gas. This lead to a complete removal of all peel parts from the fruit kernel fragments. The speed of the fluidization gas flow is increased to 2.5 to 6 m/s above the fluidized bed or within the upper area of the fluidized bed. Thus, the peel parts removed from the fruit kernel pieces are very effectively removed from the fluidized bed. The device for performing the method is a fluidized-bed apparatus (1), in the lateral walls of which nozzles (5) are arranged in the area of the fluidized bed, and the ratio of the cross-sectional area (9) of the fluidization gas extraction (8) to the surface of the fluidized bed is 1 : 2.0 - 1 : 3.0. In addition, the extraction opening (9) for the fluidization gas is arranged directly above or within the upper area of the fluidized bed. |
