摘要 PURPOSE: Yogurt using a black garlic extract, and a producing method thereof are provided to secure the excellent functionality and palatability of the yogurt. CONSTITUTION: A producing method of yogurt using a black garlic extract comprises the following steps: hot-water extracting black garlic, for obtaining the black garlic extract; mixing the black garlic extract with water, dried skim milk, and glucose; sterilizing the mixture; injecting a lactic bacterium strain into the sterilized mixture, and cultivating for 18~28hours; homogenizing the obtained culture material; and adding a sweetener.
