PURPOSE: A producing method of a natural food additive, and a meat processing method using thereof are provided to improve the quality of meat by producing the natural food additive with harmless materials to human bodies. CONSTITUTION: A producing method of a natural food additive comprises the following steps: mixing 20wt% of starch syrup or oligosaccharide, 60wt% of water, and 20wt% of malt, and aging the mixture at 50deg C for 18~24hours; mixing 90wt% of obtained aged solution, with 10wt% of additive powder including cornus officinalis and eucommia ulmoides powder, and boiling the mixture for 20minutes; adding 20wt% of ferment alcohol into 80wt% of obtained mixture, and naturally aging at 20~25deg C for a month; filtering residues from the aged solution; and mixing 94wt% filtered solution, 1wt% of vitamin C, and 5wt% of sorbitol.
