摘要 FIELD: food industry. ^ SUBSTANCE: recipe ingredients are prepared; oyster plant is cut, dried in microwave field at preset process parametres, roasted and milled. Chestnuts are roasted and milled; barley grains and soya are roasted; oyster plant, barley grains, chestnuts and soya are mixed at a weight ratio of 7:7:2:4; the obtained mixture is extracted with drinking water with phases ratio of 1:(6-7) and periodical pressure releases until the water boils, the extract is separated and filtered. The syrup (with dry substances content 37.5 - 41%) is prepared based on the extract; raspberries and syrup are packaged, vacuum-sealed and sterilised. ^ EFFECT: invention allows to produce compote with coffee flavour and aroma tones with no coffee content, simplify the technology, reduce content of boiled berries in the end product and extend the product's storage life. ^ 1 tbl
