In a process for the preparation of biologically active degradation products of native proteins, the native protein is treated with a fungal aminopeptidase which lyses L-leucinamide and also lyses L-leucine-p-nitranilide and L-cystinebis-p-nitranilide (according to a specified test) whereby terminal amino acid groups are removed and a biologically active degradation product is obtained. The aminopeptidase may result from the cultivation of an Aspergillus, Trichoderma, Penicillium or Rhizopus.
