PURPOSE: A method for manufacturing brown rice Makkoli is provided to enjoy savory taste of brown rice and to ensure rich nutrition. CONSTITUTION: A method for manufacturing brown rice Makkoli comprises: a step of pulverizing brown rice in certain particle form and steaming to obtain a hard-boiled rice; a step of pulverizing wheat or brown rice in a particle form and steaming; a step of intentionally propagating fungi in the pulverized grains to obtain koji; a step of mixing hard-82-85 weight% of boiled rice and 15-18 weight% of koji and maturing and fermenting at certain temperature and time; and a step of filtering the rice. |
