FRUCTOOLIGOSACCHARIDES COMPOSITION FOR USING AS A MATERIAL OF AN ICE CREAM, A METHOD OF PREPARATION THEREOF AND AN ICE CREAM COMPRISING THE SAME

PURPOSE: A fructooligosaccharide for ice cream ingredients is provided to ensure bulking agent effects and to maintain ice cream shape at room temperature. CONSTITUTION: A method for preparing a fructooligosaccharide composition comprises: a step of fixing Aureobasidium sp. fructoxyl transferase to a carrier and filling into a column; and a step of passing a mixture of grain syrup and sugar through the column. The fructooligosaccharide composition contains 10-12 weight% of glucose, 7-8 weight% of sugar, 2-3 weight% of maltose, 12-14 weight% of kestose, 9-10 weight% of maltotriose, and 15-20 weight% of maltopentaose.
