摘要 Disclosed is a resistant starch-rich starch which satisfies the following requirements (a), (b), (c) and (d): (a) having a resistant starch content, determined by the AOAC method 2002.02 for measuring resistant starch, equal to or greater than 60%; (b) having a molecular weight peak of from 6×103 to 4×104 inclusive; (c) having a molecular weight dispersion of from 1.5 to 6.0 inclusive; and (d) showing a gelatinization enthalpy, measured by differential scanning calorimetry at 50-130oC, equal to or less than 10 J/g.
