FIELD: food industry. ^ SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. The method envisages preparation of the recipe components, cutting scorzonera, drying scorzonera and tangerine refuses in microwave field at preset process parametres, roasting scorzonera, additionally drying tangerine refuses by convective method, mixing scorzonera and tangerine refuses and cryomilling the produced mixture in liquid nitrogen. ^ EFFECT: method allows to produce new coffee beverage of non-traditional raw materials according to a nonwaste technology. |
