FIELD: food industry. ^ SUBSTANCE: invention relates to technology of canned compotes manufacturing. The method provides for recipe ingredients preparation, scorzonera cutting, drying in microwave field at preset process parametres, roasting and milling, grape seeds roasting, mixing of scorzonera and grape seeds at a weight ratio of 7:3, extraction of the obtained mixture with drinking water at preset process parametres, obtained extract filtering, preparation of a syrup on its basis, packing of raspberries and syrup, sealing and sterilisation. ^ EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplify the technology, reduce content of boiled berries in the end product, extend the product's storage life. ^ 1 tbl |
