PURPOSE: A method and device for continuous removing animal fats from oil for frying is provided to increase the productivity of fried food by efficiently removing saturated fatty acid and cholesterol from the oil for frying. CONSTITUTION: A method for continuous removing animal fats from oil for frying comprises the next step. The oil for frying, which is heated over 100°C is rapidly cooled in -10°C, which is a freezing point of lipid. The lipid, which is quickly cooled and coagulated, is separated from the oil for frying. The sorted oil for frying passes through β -cyclodextrin column. |
