Preparation, packaging and heat treatment of gelling animal or plant proteins, to preserve fluids at room temperature in their packaging, and to gel them when put in air, comprises mixing the gelling proteins with deoxygenated water, packing in a sealed container deprived of oxygen, heating under pressure of a water-soluble gas feed at 95-104[deg] C, leaving to cool and preserving in pressurized packaging distributing using a valve. |
