METHOD FOR PRODUCTION OF CYCLOAMYLOSE FROM SUCROSE BY SIMULTANEOUS REACTION OF AMYLOSUCRASE AND 4-αGLUCANOTRANSFERASE

PURPOSE: A method for preparing cycloamylose is provided to obtain cycloamlylose by biocatalytic enzyme with safety. CONSTITUTION: A method for preparing cycloamylose from sucrose comprise: a step of adding mixture of amylosucrase and alpha-glucanotransferase to a substrate to convert from sucrose to alpha-1,4 glycan by amylosucrase and to convert from alpha-1,4 glucan to cycloamylose by alpha-glucanotransferase. The amylosucrase is derived from Neisseria polysaccharea. The alpha-glucanotransferase is derived from Synechocystis sp.
