PROBLEM TO BE SOLVED: To provide a method of efficiently producing carnitine fumarate of controlled hygroscopicity, a specific tap density, and a low impurity content, by a simple operation. SOLUTION: The method of producing carnitine fumarate includes adding carnitine into a lower alkyl alcohol comprising fumaric acid. The process of adding carnitine and a process of adding fumaric acid into a lower alkyl alcohol comprising fumaric acid may successively be repeated once or more times, whereby carnitine fumarate of controlled hygroscopicity, a specific tap density, and a low impurity content can efficiently be produced.
