PURPOSE: A method for preparing fermented wine using Psidium guajava is provided to ensure excellent functionality and to have rich flavor and taste of Psidium guajava. CONSTITUTION: A method for preparing fermented wine of Psidium guajava comprises: a step of pulverizing Psidium guajava and heating to obtain Psidium guajava juice; a step of adding yeast to the Psidium guajava juice and culturing to obtain crude liquor; a step of adding sodium sulfite and ascorbic acid to the Psidium guajava juice and mixing with the crude liquor and fermenting; a step of maturing the crude liquor to obtain matured crude liquor; and a step of filtering the matured crude liquor to obtain Psidium guajava fermented wine. |
