PURPOSE: A method for preparing Moju by distillation is provided to enhance economic effect and to remove burning smell of the crude liquor. CONSTITUTION: A method for preparing Moju and distilled liquor comprises: a step of dipping and steaming rice and inoculating seed malt to the steamed rice to prepare bred yeast; a step of adding yeast an water to the bred yeast and culturing to prepare crude liquor; a step of adding bread yeast and water to the crude liquor and culturing to prepare first step ferment; a step of dipping and steaming the rice and adding to the first step ferment to obtain a second step ferment; a step of adding nuruk to the second step ferment and fermenting to obtain matured ferment; a step of adding water to the matured ferment to obtain coarse liquor; a step of black sugar and herb materials to the coarse liquor and inputting steam into a reactor; and a step of heating the reactor. |
