摘要 The present invention relates to a preparation method for low protein rice, and a preparation apparatus thereof, and more specifically, to a preparation method for low protein rice which maintains the pH of an enzyme reaction solution without a difference in pH between an upper layer portion and a lower layer portion compared with a stationary reaction without circulation, by continuously circulating a protease reaction solution at optimum pH and temperature, thereby improving the efficiency of the enzyme reaction and remarkably enhancing the protein removing effect, allows rice to be uniformly exposed to the enzyme reaction solution even for treating large amounts of rice by intermittent aeration, thereby enable the more effective removal of proteins and provide a low protein rice for industrialization such as aseptic packaged boiled rice, and a preparation apparatus thereof.
