摘要 <P>PROBLEM TO BE SOLVED: To provide a method for reducing bitter taste of bitter melon (Momordica charantia) to allow utilization of bitter melon as a new food processing material and contribute to expansion of the use of the same. <P>SOLUTION: Bitter melon (Momordica charantia) is immersed in water, ethanol-water, sugar solution, etc., or kneaded together with salt or boiled in a salt solution and, thereafter, immersed in running water to reduce the bitter taste of bitter melon.
