<p>Product contains per 1000 g dry non-fat milk extract (a) gelling agent in an amount of 1 to 10 times the quantity required to form a gel in 1 litre of water and (b) dry proteolytic enzyme in an amount of 1 to 10 times the amount required to coagulate 1 litre of milk at 20 degrees C in 2 hours. Lactones such as delta-gluconolactone may be added to accelerate the action of the rennet.</p> |
