<P>PROBLEM TO BE SOLVED: To provide a method, though it has a simple manufacturing process, for manufacturing fish meat colored uniformly without producing spots and color unevenness and a method for coloring fish meat uniformly. <P>SOLUTION: The method includes immersing fish meat in aqueous solution containing: at least one selected from the group consisting of annatto pigments, cochineal pigments, and monascus pigments; and gum ghatti and/or gum arabic. <P>COPYRIGHT: (C)2011,JPO&INPIT |
