<P>PROBLEM TO BE SOLVED: To provide a method for producing sweeter and favorably aromatic Amazake. <P>SOLUTION: A method for producing Amazake includes: a first step of steaming polished rice to obtain steamed rice and admixing laved water with the steamed rice followed by charging rice malt in a mixture to subject a rice malt-added mixture to saccharification/fermentation for a prescribed period of time; and a second step of further charging rice malt into saccharified/fermented steamed rice for a prescribed period of time.
