<p>The apparatus has a rotor driven by a shaft through which the milk or milk product passes to the rotor. The milk is driven by the rotor to a homogenisation zone formed between the rotor and the stator. A first surface on the stator and a second surface on the rotor are arranged to form an intermediate homogenisation slit with minimal spacing between the surfaces. At least the first surface of the stator is jagged to form a local turbulent region at the surface.</p> |
