Beef preserving method - of brine injected beef pieces in a tumbler/d arrangement under vacuum conditions

Cylindrical twin drum arrangement in which boned beef pieces previously injected with brine are subjected to vacuum conditions in the drum and rotated for 4 min periods every 2 hrs. for a total period of 24 hrs. The drum arrangement comprises a cylindrical bottom drum to which a cylindrical top drum is bolted which is approx. twice the size of the bottom drum. The drums mounted on a central hollow spindle which enters the top drum in the lower half section, move in a tumble motion so that during each fall revolution the meat moves from the small cylinder to spread into the larger top cylinder.
