KOJI MACHINE APPARATUS AND METHOD

PURPOSE: An apparatus and method for preparing a large amount of uniform bred yeast using a koji-fermentor are provided. CONSTITUTION: An apparatus for preparing bred yeast comprises: a koji-fermentor for steaming and seeding spawn; an outer air inflow damper which controls inflow level of outer air through a duct; a ventilation fan which sends the air for supplying moisture into the koji-fermentor; a fan for sending air for supplying moisture into the koji-fermentor by interlocking with the ventilation fan; an outer air damper for controlling ventilated air level through the fan; and a main computer for controlling entire motion.
