<P>PROBLEM TO BE SOLVED: To provide a Chinese noodle wheat flour composition excellent in reconstitution when cooking with a microwave oven, in spite of being relatively thin noodles, excellent in palate feeling after cooking, and suppressing boiling sogginess after cooking. <P>SOLUTION: This Chinese noodle wheat flour composition is a wheat flour composition usable for Chinese noodles to be cooked by microwave oven heating, and includes at least wheat flour having spring-sown hard white wheat as the raw material. The Chinese noodles have a cross section whose longer axis is 1.2-1.7 mm. The Chinese noodles for microwave oven cooking, using the Chinese noodle wheat flour composition are usable as microwave oven heating corresponding goods having a quality equal to that of raw noodles and high convenience. <P>COPYRIGHT: (C)2011,JPO&INPIT |
