PROBLEM TO BE SOLVED: To provide a control device and a control method for a pasteurizer, by which the detailed degree of heat sterilization of a product can be obtained in real time, the degree of heat sterilization can be obtained for each product or a small product group, and only a target product group, not a large lot unit, is easily be distinguished when a product is excessively or inadequately sterilized. SOLUTION: The control device 8 for a pasteurizer includes position information encoding means 3 for subdividing and encoding the position to which a product 1 is conveyed by a product conveyor 2. Further the device is provided with measuring means 16a to 16f for measuring heat sterilization conditions for the product 1. The device captures a signal indicating the conveyance position information on the product 1, detected by the position information encoding means 3, and the signal indicating the heat sterilization conditions for the product 1, measured by the measuring means 16a to 16f. The degree of heat sterilization of the product 1 passed through a sterilization zone can be calculated, for example, by integrating the heat sterilization conditions for the product 1 at each product conveyance position subdivided according to a control program.
