PURPOSE: A dough conditioner is provided to stably maintain humidity in a freezing and defrosting section and to improve the quality of manufactured bread. CONSTITUTION: A dough conditioner comprises: a fan circulating the air of a fermentation room; a lower duct(210) controlling the temperature and humidity of the fermentation room; an upper duct(220) guiding the air provided through the fan; a sidewall duct(240) guiding the air provided through the fan; a loading angle in which a loading plate is settled; and a humidifier which forcibly generates moisture and supplies the moisture. |
