PURPOSE: A cooking method of pork back ribs using ginseng is provided to offer the pork back ribs with the new taste using the ginseng, compare to the conventional pork back ribs. CONSTITUTION: A cooking method of pork back ribs using ginseng comprises the following steps: cutting raw pork back ribs into 10~12cm, and cutting in the ribs among bones; cutting the ginseng into 5~7mm; inserting the ginseng slices to the cut ribs; cooking the pork back ribs, and aging with roasted salt; roasting the aged pork back ribs inside a yellow soil furnace with oak firewood; and secondly roasting the cooked pork back ribs with hardwood charcoal.
