<P>PROBLEM TO BE SOLVED: To provide an stable carotenoid-containing emulsion usable as an aqueous solution of a dye for food, enabling clear and stable coloring of aqueous foods, to provide a production method thereof, and to provide applications thereof as a coloring agent. <P>SOLUTION: A carotenoid-containing emulsion comprising (a) 40-70 pts.wt. glycerol, (b) 0.5-10 pts.wt. glycerol fatty acid ester, (c) 0.5-10 pts.wt. sucrose fatty acid ester, per 10 pts.wt. carotenoid-containing oil, and water, is prepared.
