PURPOSE: A producing method of tofu is provided to use sea water as a coagulating agent and bean oil or olive oil as a coating agent for a heating container, to reduce the moisture content of the tofu. CONSTITUTION: A producing method of tofu comprises the following steps: washing fresh soybeans for removing foreign materials, and soaking in water for 10~30hours; crushing the soaked soybeans to make soymilk; heating the soymilk inside a heating container at 90~120deg C for 2~7minutes; filtering the heated soymilk with a filter cloth to remove bean-curd dregs; inserting a coagulating agent and an antifoaming agent to the filtered soymilk, and stirring; compressing coagulated precipitates for 60~100minutes; and cooling the precipitates. An additive including bean oil or lecithin is added before the filtering process. |
