PURPOSE: A producing method of cheese including shrimp is provided to add shrimp to cheese in order to produce high quality and functional cheese. CONSTITUTION: A producing method of cheese including shrimp comprises the following steps: sterilizing raw milk; fermenting and solidifying the sterilized milk to make a curd; cutting the curd into 0.5~0.7cm; stirring the cut curd at 30~35deg C for 30~60minutes and removing whey; adding 70~75deg C water, stirring at 35~40deg C, and secondly removing the whey; adding the shrimp; and compressing and molding before aging the mixture.
