摘要 PURPOSE: A producing method of rice cake for stir-fried rice cake using ground seafood is provided to improve the chewing texture of the rice cake by uniformly dispersing seafood particles inside the rice cake. CONSTITUTION: A producing method of rice cake for stir-fried rice cake using ground seafood comprises the following steps: soaking rice in water for 3~5hours; crushing the soaked rice using a crusher, and obtaining rice powder(2); crushing cooked seafood into the crusher, and obtaining seafood particles(3) with the size of 5~10mm; mixing the rice powder and the seafood particles inside a mixer; steaming the mixture at 100~120deg C for 10minutes; stirring the steamed mixture to improve the chewy texture; extruding the mixture using a rice cake extruder, and cooling with cooling water; and cutting into the size of 5~6cm.
