PURPOSE: A producing method of red pepper paste with sorghum bicolor and the red pepper paste with the sorghum bicolor are provided to offer the functionality of sorghum bicolor powder to the red pepper paste. CONSTITUTION: A producing method of red pepper paste with sorghum bicolor comprises the following steps: mixing sorghum bicolor powder, malt, and water in a weight ratio of 1~1.1:0.1:1.1~1, respectively; firstly fermenting the mixture at 40~42deg C for 20~24hours; secondly fermenting the outcome at 70~80deg C for 4hours; heating the obtained sorghum bicolor-malt water at 100~120deg C, for evaporating 50~70% of the water; mixing the obtained sorghum bicolor-malt syrup with red pepper powder, and adding fermented soybean soy sauce; aging the mixture for 28~30days; sterilizing the mixture for 1~2hours; and packing and storing the obtained red pepper paste.
