PURPOSE: A producing method of walnut cake containing fermented grape juice is provided to improve the taste of the walnut cake, and to improve the storage property. CONSTITUTION: A producing method of walnut cake containing fermented grape juice comprises the following steps: inserting 1~6wt% of yeast to grape juice, and fermenting for 12~36hours at 20~35deg C; injecting 0.5~2wt% of lactic acid bacteria to the grape juice, and fermenting to obtain the fermented grape juice; mixing 20~30wt% of flour, 20~3wt% of sugar, 20~30wt% of eggs, 0.01~1wt% of salt, and 0.01~2wt% of baking powder; adding 15~25wt% melted fat, and 5~10wt% of fermented grape juice to the mixture to obtain dough; aging the dough; and inserting fillings into the obtained dough, and baking. |
