摘要 PURPOSE: A method for manufacturing fruit wine contain concentrated active ingredients is provided to ensure rich taste without addition of sugar. CONSTITUTION: A method for manufacturing concentrated fruit wine comprises: a step of adding K_2S_5 to crushed grapes and inoculating yeast; a step of fermenting at 10-30°C for 3-15 days to obtain a first must; a step of filtering the first must and adding K_2S_2O_5 and removing precipitate to obtain a second must; a step of freezing the second must; a step of thawing the second must through 1-5 days to concentrate; and a step of maturing and filtering the second must. The used grapes are Campbell Early or Muscat Bailey A. Thawing is performed in a sealed tank filled with nitrogen or carbon gas.
