The present invention relates to the field of the animal diet, to the obtention of additives from plants, specifically to the obtention of a product with high fructanes levels and the application thereof as prebiotic upon achieving an enhanced growth of bacteria beneficial to the gastrointestinal tract (probiotic bacteria), which results in an improved health of the host. The purpose of the invention is to provide a process for obtaining a prebiotic product resulting from the Agave fourcroydes to be used as additive, which has high fructanes levels in polydisperse mixtures, in animal diets. The process consists in a plurality of extractions from the stem using deionized water, at a temperature of 500°C, where the liquid phases thus obtained are collected and filtered in order to reduce the volume thereof, finally being lyophilized and obtaining a solid product. The resulting product is a functional feed with a prebiotic effect, which stimulates the growth of bifidobacteria and lactobacilli in the gastrointestinal tract, thus reducing the pH and increasing the formation of fatty acids of short chain, which promotes a good health and productive behavior in the animal.
