<p>Cutter is intended for cutting the cake of curds and consists of vertical blades, these form a chequer-work pattern and delimit cells with a square or rectangular section. These blades are surrounded by a frame with a height greater than that of the blades and, consequently, greater than the thickness of the cake of curds, which is to be cut into portions. The frame has a top which delimits a chamber with the upper ends of the blades. A tube allows the chamber to communicate with a vacuum pump or the atmosphere. When the cutter is lowered into the curd its blades cut the cake into a number of portions, thus filling the cells. The vacuum is applied and the cutter withdrawn from the tank and brought over a mould. The press. in the chamber is then restored to atmospheric when the contents of the cells are discharged.</p> |
