The invention relates to the wine industry, namely to a process for wine stock treatment with cold.The process, according to the invention, includes the flow cooling of wines with recirculation from thermally insulated tanks through a heat exchanger with vortex generator, in two successive stages, the subsequent ageing of wines in thermally insulated tanks and removal of formed crystals, at the same time the cooling in the first stage is carried out from the temperature of saturation of tartrate salts in the instable wines up to the attainment of the temperature of saturation of tartrate salts in the stable wines, maintaining their temperature at the outlet from the heat exchanger below the temperature of the following ageing in thermally insulated tanks, and in the second stage maintaining a minimum difference between the temperature of wine inlet and outlet from the heat exchanger, providing for the growth of microcrystals formed in the first stage. Cooling is carried out up to the attainment of the required temperature for subsequent ageing.The result is to optimize the process for wine treatment with cold.
