PURPOSE: A producing method of dombaeki(traditional shark dish) using a decompressing and salting method is provided to improve the quality of the dombaeki. CONSTITUTION: A producing method of dombaeki(traditional shark dish) using a decompressing and salting method comprises a step of salting cut frozen shark meat with 1~3% of salt at a decompression state, using a direct salting method or a brine salting method. The decompression state is a vacuum state of 500~600mmHg. |
