PURPOSE: A producing method of vegetable snack by freeze drying instead of a deep frying treatment is provided to minimize the damage of nutrients of vegetables, and to maintain the unique flavor of the vegetables. CONSTITUTION: A producing method of vegetable snack comprises the following steps: blanching vegetables at 90~94deg C for 5~10minutes; adding purified water; crushing the vegetable for obtaining vegetable liquid; inserting a binder to obtain a vegetable mixture; molding the vegetable mixture inside a mold; and freeze-drying the molded vegetable mixture at -35~-45deg C. |
